A small quantity of grapes were fermented in a special vertical tank; the fermentation lasted a week and Scavino used a submerged cap for another four or five days of maceration. |

Super-long and super concentrated, this is hard to fault. Yet, despite all the seeming extravagance, it remains a composed red with a long life ahead of it. Drink at your leisure. |
